Galactooligosaccharides (GOS) are functional oligosaccharides with natural properties, and their molecular structure generally involves connecting 1-7 galactose groups on galactose or glucose molecules, namely Gal - (Gal) n-Glc/Gal (n=0-6). In nature, there are trace amounts of GOS in animal milk, while human breast milk has a higher content. The establishment of bifidobacteria in infants largely depends on the GOS components in breast milk.
Introduction:Lactose in milk was used as raw material β- Galactosidase catalyzes the hydrolysis of galactoside bonds to produce galactose and glucose. Through the action of galactoside, the hydrolyzed galactoside is transferred to lactose molecules to produce galactooligosaccharides.
