Isomaltulose(Palatinose), White crystal, odorless, sweet in taste, with a sweetness of about 42% of sucrose. It has a pure sweetness and is basically the same as sucrose. It has no adverse aftertaste, acid resistant, heat resistant, and not easily hydrolyzed , and sucrose can be fully hydrolyzed under the same conditions). Its thermal stability is lower than sucrose, and it has a reduction method and is easily soluble in water. Its solubility in water is lower than that of sucrose. The viscosity of its aqueous solution is also slightly lower than that of sucrose of the same concentration. This product can be enzymatically hydrolyzed in the intestine and absorbed and utilized by the body. Has little effect on blood sugar levels and does not cause dental caries. Usage: Sweetener, prebiotic.
