Gellan gum gel can be used in canned pet food, to replace the traditional – carrageenan- locust bean- KCl gel. Gellan gum can be used in conjunction with other food gums, such as gellan gum, guar gum and xanthan gum used together can control the syneresis; gellan gum, xanthan gum and locust bean gum can reduce the brittleness, gellan gum can replace about half of the amount of carrageenan mixture in pet food.
